[ 食 材 ]五花肉500g、笋1000g、咸肉200g
料酒5ml、葱姜适量

1. 准备所需材料,喜欢吃笋的可以多放一点,具体看个人喜好

2. 将笋剥去外壳,如果觉得根部比较老可以将根部切成大块,放入汤中一起烧,吃的时候扔掉就好

3. 将笋放入沸水中焯烫2分钟后捞出切滚刀块备用

4. 将五花肉切块放入凉水中,煮开,焯去血沫后捞出,咸肉冲洗一下

5. 将咸肉整块放入锅中加入半锅水,煮上10分钟,加入笋块,再加入足够量的水,中小火

6. 炖上约20分钟,取出咸肉块,放入五花肉加入姜片、葱结、料酒

7. 继续保持小火状态,炖上40分钟

8. 将之前取出的咸肉切块,放回汤中,再炖上10-15分钟即可
- 笋烧肉-

1. 原料准备好,笋剥去外层硬壳,削去老根,用刀背拍扁后切成寸段,五花肉切厚片

2. 水烧开后将笋汆烫下,捞出来沥干

3. 五花肉冲洗干净,下锅飞水

6. 加上红曲米粉末,拌匀,加入适量清水,以没过肉和笋为宜,大火烧开转中小火煮上30~45分钟

7. 然后加盐、生抽、鸡粉调味,大火收汁即可

- 油焖笋-
[ 食 材 ]笋4根、油15ml、生抽15ml白糖1茶匙、葱适量

2. 洗净切条(或切块,切滚刀块都可以)

3. 热锅入油,油温后倒入笋段大火煸炒。
